Koomal Chawool is a unique type of rice from Assam that can be eaten without cooking. Koomal Chawool or softened rice is prepared by Koomal Dhaan (Bora rice variety). Bora Dhaan is cooked in a large kadai at outside the house. When it is cooked they are spread on a flat surface to be sun-dried. Then the rice that is dried along with the shell is ground at traditional mills. They are very delicate and require care and timing. We here in Bhogali Jalpan, instead of our old indigenous system, we developed them to fulfil large scale of production. We use roaster machine instead drying under sun. The ground rice will come out in a beautiful colour. These are the actual Koomal Chawool and they can be kept in an air-tight packaging system for more than three months. Since it is cooked along with the shell it retains the vitamins and all round nutrition. And helps reduce bad cholesterol too.
